How many campaigns and ad sets should I actually be running?

Fewer than you think. Most healthy D2C accounts run 2-3 campaigns and 2-4 ad sets each, splitting the same objective wider just fragments your budget and data across accounts that all learn slower. Consolidate first, and only add a new campaign or ad set when you have a genuinely new objective, audience or product line to test, not because a 'structure guide' said so.
